Vegan “chicken” salad

Ingredients

  • 175 gr plant-based chicken pieces
  • 75 gr natural hummus
  • 75 gr plant based yoghurt
  • 2 tsp curry powder
  • 20 ml/2tbsp lemon juice
  • 2 spring onions
  • 10 stems fresh chives
  • 1 tsp coconut oil
  • salt & pepper to taste

Instructions

  1. Heat up the coconut oil in a pan and cook the ‘chicken’ until it browns.
  2. In the mean time, mix the remaining ingredients until it because a sauce like consistency.
  3. Remove the ‘chicken’ from the pan and use a fork to shred the pieces.
  4. Mix them in with the sauce and voila!
  5. Add salt and pepper if you like.

Tips

  • I used a store bought spice mix, but you can make your own! Mix the following spices:
    • 1 Tbsp ground coriander seeds
    • 1 ½ tsp cumin
    • 1 tsp turmeric
    • ½ tsp ground black pepper
    • ½ tsp chili powder
    • ½ tsp ground ginger
    • ½ tsp garlic powder
    • ½ tsp fenegreek powder
