Sandwich with home-made pickles

I have always loved pickles, which made my boyfriend worry quite some times ;). But the combination of a crunchy exterior and a tangy vinegar pop! I usually eat them as a snack after dinner or as an addition to a beer/charcuterie platter. However, I used them the most as a sandwich topper for extra crunch and taste!

Making them yourself gives you the opportunity to add the flavors you like and since it is not that difficult, I would suggest you give it a try. So this recipe will show you how I pickle my cucumbers and also how I used them on a sandwich.

In this recipe I use ‘normal’ cucumbers but if you can get your hands on cocktail- or kirby cucumbers.

Ingredients for the pickles

  1. Half a cucumber
  2. 200 ml vinegar
  3. 100 ml water
  4. 15 gr salt
  5. 10 gr sugar
  6. 3/4 dill sprigs
  7. 10 gr mustard seeds
  8. 10 gr whole black peppercorn
  9. 5 gr whole red peppercorn

Instructions

  • Bring a large pan of water to a boil and add the glass container to the pan. Leave the container in for a few minutes.
  • In a saucepan, combine the vinegar, water, salt and sugar to the pan and bring this to a boil as well. Let it simmer for 5 minutes.
  • In the mean time, slice the cucumber in small ‘coins’. I try to make them around 3-4 mm thick. Try to make them as even as possible.
  • Dry the container and what until they it cooled down.
  • Add the sliced cucumbers and dill sprigs to the container. Pour the vinegar mixture in and make sure the slices are covered (add some additional water otherwise).
  • Wait till the liquid is cooled down and close the container.
  • I leave the container outside the fridge for 2-3 days to let the magic happen. Afterwards I keep mine in the fridge.

Tips

  • Really try to play with the ratio until you get your perfect pickle. Do you like more dill, add more dill and if you like them less tangy, add some more water the next time.
  • You can also add different spices to your liking. For example, if you would like some heat, add some chili flakes!

As I said, I really like my pickles on top of a sandwich. I usually have all ingredients for this sandwich is my pantry, so this is most of the time my go to sandwich. It is not at all difficult, but therefore no excuse not to give this a try.

Ingredients

  • 2 bread slices
  • 2 table spoons vegan mayo
  • 1 leave of iceberg lettuce
  • 1 sliced tomato
  • A few slices of home made pickles.
  • Salt & pepper to taste

Instructions

  1. Spread a layer of mayo on the sliced bread.
  2. Stack it remaining ingredients (lettuce, tomato and pickles) all up 🙂
